Devendo criar, aplicar e manter procedimentos de seguran\u00e7a alimentar baseados nos princ\u00edpios HACCP (Regulamento 852\/2004).<\/h4>\n<h4 style=\"text-align: justify\">Foi criada uma metodologia para\u00a0aplica\u00e7\u00e3o dos princ\u00edpios do HACCP para micro e pequenas empresas, baseada no princ\u00edpio\u00a0- Alimento Seguro, Melhor Neg\u00f3cio.<\/h4>\n<h4 style=\"text-align: justify\">Nesta metodologia, a implementa\u00e7\u00e3o dos princ\u00edpios HACCP \u00e9 feita pelas pr\u00e1ticas que evitam\/eliminam contamina\u00e7\u00f5es com perigos biol\u00f3gicos, qu\u00edmicos e f\u00edsicos, considerando como \u00e1reas de controlo\u00a0<strong><u>Contamina\u00e7\u00e3o Cruzada, Higieniza\u00e7\u00e3o, Arrefecimento (manuten\u00e7\u00e3o da cadeia de frio) e Confe\u00e7\u00e3o \u2013 metodologia CHAC <\/u>(Cross-contamination, Cleaning, Chilling, Cooking\u00a0- 4C\u00b4s)<\/strong>.<\/h4>\n<h4 style=\"text-align: justify\">Pretende-se que\u00a0sejam elaborados registos adequados \u00e0s empresas, atrav\u00e9s de respostas a quest\u00f5es operacionais como:\u00a0<strong>Etapas\/Pontos a Controlar\/ Porqu\u00ea?\/Como\/ Quando Fazer?
